Lemon Chiffon Cake Day

This food holiday celebrates a light cake made with vegetable oil, eggs, sugar, flour, baking powder, and lemon flavoring. The fluffy texture of chiffon cake comes from beating egg whites until stiff and folding them into the cake batter before baking. Developed in 1927 by a caterer, Henry Baker, the recipe for chiffon cakes was sold to General Mills in 1947.
